The Healing Miracle Of Coconut Butter!

Years ago when we lived on a rural farm in Tennessee, we milked a high fat Jersey cow and I made raw unpasteurized butter weekly. We didn't have refrigeration, so we would keep it cool by placing it in a jar and dropping it in the water of the spring head, where the waters kept a constant temperature of 55 degrees. The spring head was down hill from the house, so when you wanted butter, you would need to trek down and get it. It was a lot of work for butter, but it was the pioneering 'Back to the Land" period, and back then who wouldn't walk a mile for sweet butter?

Today at Diet For Living Center we know all that butter fat is no longer the best for us. We teach and serve a plant based menu, so that the body may cleanse, repair, and rebuild. "Known for decades as a liver protective food, beets may not be the newest kid on the block, but mounting research is showing why you should take another good look at this root vegetable in juice form," says Our Man in Scrubs, Dr Oz. After the holidays we all need liver love.

I can't imagine a world without beets. One of the reasons is that raw beets are a unique source of phytonutrients called betalains. Studies have shown betalains provide a power house of antioxidants, anti-inflammatory and detoxification support.

I know some of us are used to popping beets in the pot to boil, but I beg you to reconsider. Unlike some other food pigments, betalains undergo very steady loss as the length of cooking time is increased. This is serious if we want to reap the true benefits of this Superfood.

 

Recent laboratory studies on human tumor cells have shown tumors lessen when exposed to betalains. These tumors include colon, stomach, lung, breast, prostate, uterine and testicular. I have no intention of my tumor returning, so I am totally on board for a big dose of betalains. We buy beets ten pounds at a time because they store so well in the fridge.

BEST FRESH PRESSED BEET JUICE EVER

All Raw, All Organic:

3 carrots peeled

½ large beet peeled

1 Granny Smith green apple

3 Romaine lettuce leaves

¼ fresh lemon with peel

Feed all of the above through the juice hopper. Pour into a glass and drink right away while fresh.

OUR RAW SUPERFOOD CHILE CHOCOLATE TRUFFLES!

Raw chocolate goes well with chiles and red peppers. The added heat, not red hot, gives a little zing of surprise to the tongue. Rich truffles made of raw cacao are both gourmet and healthy, taking care of your needy holiday sweet tooth. We use heart healthy raw coconut oil instead of heavy cream. This gives them a rich moist flavor you seek in the perfect truffle. Rolling them in shredded coconut or chopped nuts creates a simple finish.

 

 

 

 

 

 

 

I also like to give them as gifts to our forward thinking friends and family this time of year. To package, I use mini cupcake liners to cradle these little yummies. I have never found anyone who did not bite into one and smile. "Wow!" they say!

We purchase our raw cacao from the 'LiveSuperFoods' store on the Product's Page on our website. We buy in ten pound bags. We take our raw chocolate seriously. You may want to buy a one pound bag. It's raw, organic, packed with magnesium and has the highest antioxidant source known.

Here's our easy recipe:                                     

raw organic cacao powder

Our Chili Pepper Raw Chocolate Truffles

2 tablespoons raw coconut butter, melted

1 tablespoon raw agave

2 tablespoons coconut flour

2 tablespoons raw cacao powder

5 finely chopped dates

1/8 teaspoon red pepper

1 teaspoon pure vanilla

Simply mix all the ingredients in a glass bowl and form into balls. Roll the balls into finely ground coconut flour. Set into mini cupcake liners. Using a recycle box, arrange the chocolates. Give them to friends and family with love.

THE MIGHTY MAGIC OF RAW JUICING!

Freshly pressed and masticated juices are quickly becoming our current health craze. It's a no brainer that homemade fresh pressed juices are healthier then the pasteurized store bought bottled varieties.

The old type inexpensive centrifugal model juicers use fast spinning blades to tear apart fruits and vegetables, which adds heat and exposes ingredients to oxidation, the two things that cut down on how many nutrients make their way into your glass.

Masticating 'cold pressed' juicers like the Model 8005 from Omega are the 'way to go' in modern juicing. These machines extract juice by slowly breaking down fruits and vegetables without adding heat, hence the term 'cold pressed'. This is the only juicer we use at Diet For Living Center. CUCKOO FOR COCONUT WATER!

Did you buy into the hype about bottled, canned and boxed coconut water? In the past five years the industry has exploded and found its way into the hands and heart of many a yogi and yogini. Bottles sit next to yoga mats in studios across the country.

The big 'friendly"'coconut water companies have supported many events and studios. Coconut water is a hot commodity, especially in Hot Yoga, where students perform their routines in rooms heated to more then 100 degrees.

But now the big coconut companies are being hit with class-action lawsuits. Their labels lied.

To start with, boxed, bottled and canned coconut water is 100% pasteurized. That means at least 275 degrees. Good-bye benefits. Just empty liquid.

What is true is coconut water, the clear liquid straight out of a young green coconut, is one of the best foods for humans on Planet Earth. Super, super nutritious, easy to digest, it's a staple in tropical countries from Colombia to India. Sometimes you can buy it from street vendors here in the US in urban Latino and South Asian neighborhoods. Here in ABQ, NM, they sell it ready to sip at our local Ayurveda restaurant, Annapurna. Yum.

But it's not so hard to drink raw baby coconut water at home. Whole Foods and Asian markets sell baby coconuts in the cold section of the store.

            

Here's how easy it is to prepare. Nature designed the baby coconut so that we can get inside to access this super food liquid.

RAW COCONUT LOVE

1 Baby Coconut

1 kitchen cleaver

1 glass or plastic straw

Set the baby coconut on its side, holding it with one had around the bottom (way away from the cleaver).

With the cleaver in the other hand, slowly hack around the pointy top till it gives way. This takes all of about one minute. When you have made entry, quickly turn the coconut upright before you lose the liquid. Pop your straw in the hole and sip with a big smile on your face.

   

 

 

 

 

 

 

 

It is so delicious!

When you finish, return to the cutting board and make a the hole larger so that you can eat the soft, lovely coconut meat inside. It taste like creamy-dreamy custard. Baby coconut is a healthy drink and snack all in one.
