At last, health prevention is getting the respect it deserves. Americans are coming to their senses, taking action instead of waiting until grand measures have to be taken to save their lives.

Everyone is talking about a Plant Based Diet. Why, even Bill Clinton is 'out' as a Vegan after his heart episode. Chelsea is getting married and he said "he doesn't want to miss his grandkids".

Both my great grandfather and grandfather died of massive heat attacks before their time. By massive we mean the pain is so great you feel like a freight train is rolling over your chest just before you take your last breath. My father was saved from the same fate by a modern five part heart by-pass operation when he was just 53.

It was once believed that this family sequence of events was attributed to heredity. But medicine has grown-up. He was advised to give up the foods that killed other family members, add exercise and lose weight if he wanted to stick around.

He had the hell scared out of him when they peeled back his chest, did the procedure and stapled him back together.

To his great credit, over night, he added two miles of walking daily and eliminated the foods that were killing him. He lived to a truly ripe old age of 83. By then he felt content that he'd lived a long full life instead of being jerked off the planet before he was ready.

My Dad's old diet was stacked against him. Lots of cream, butter and sour cream. He loved, loved, loved fried fatty foods, snacking, and dip. I mean, who doesn't love dip? We gotta keep our dip!

There is no reason to give up the dip, this cherished favorite. It's only important to change the ingredients. Keep it vegan, raw and dairy free. Our new Raw food recipe for dip is both yummy and creamy. Making change doesn't have to be painful. It can be the most fun you've ever had!

PAULA'S DAD'S RAW VEGAN DIP

2-3 cloves peeled fresh garlic

¼ cup filtered water

¼ cup extra virgin olive oil

¼ cup Nama Shoyu unpasteurized soy sauce

4 pitted dates

4 stalks organic celery

Soak the dates in a glass jar over night, and drain.

Using a Vita Mix or high speed blender, blend the water, olive oil, soy sauce, garlic and dates. Chop up the celery stalks into 1 inch size. Add it to the mixture and blend till smooth. Serve up with vegan, gluten free raw chips or baby carrots. YUM!

I remember clearly the very date and time I experienced my first granola. I was seventeen years old, I was standing in the free Hog Farm breakfast line at the Woodstock music festival on Sunday, August 17th 1969. Wavy Gravy had just announced his most famous line "What we have in mind is breakfast in bed for 400,000". With $3000, the Hog Farm members had purchased 1200 pounds of rolled oats, 200 pounds of wheat germ and truck loads of currants, almonds, dried apricots and honey.

This historic event made 'Sunshine Happy Hippie Granola' famous. Today, 10 kinds of granola sit in bins in every Coop and Whole Foods across the nation.

Because the rolled oats in granola are first pre-cooked, dried, then steamed, and because the whole affair is then baked in the oven for 30 min at 350 degrees, raw food enthusiasts have up-graded granola.

We have invented ways to re-construct this national favorite food while keeping all the vitamins and minerals intact as well as 100% of the enzymes, protein and antioxidants, making it a true Super Food. We eat ours with home made vegan, dairy free raw almond milk or as a snack while hiking and biking.

Here's are favorite recipe. Made in the dehydrator at 115 degrees. Everything is soaked overnight to begin the sprouting process, making it more nutritious and easier to digest.

OUR GREEN PLANET RAW GRANOLA!

1 cup buckwheat groats (this is a protein rich wheat-free flower seed)

½ cup raw macadamia nuts

½ cup raw almonds

½ cup raw cashews

½ cup coconut flakes

SYRUP

9 dates

¼ cup maple syrup

¼ cup raw honey

¼ fresh lemon juice

zest of two lemons

Using quart Ball jars, soak the buckwheat groats, macadamia nuts, almonds, cashews and dates overnight.

Drain all the nuts and add to a table top food processor, pulse until all the nuts are broken, but not finely chopped. Drain the buckwheat groats, and add nuts, groats and coconut to a large mixing bowl.

In a small table top food processor, combine the dates, honey, lemon juice and maple syrup and pulse till everything is well mixed. Take this liquid and pour it over your dry ingredients. Fold everything in together, and spread thinly on dehydrator trays. Dehydrate at 115 degrees for 24 hours, or until your granola is crispy. Store in a glass jar with a tight top. Nibble when you need something crunchy that's truly healthy.

Believe me, I know it's frustrating to change your lifestyle when it comes to diet, replacing well-loved and cherished childhood recipes with ones using new foods that you may never have used or tasted. It can all seem like too much. But then so can being sick and hanging at the doctor's office re-reading 'People Magazine'.

When you're feeling a little blue about change, it may be time to invest in more fun kitchen tools to put the zing back into your diet.

Everyone I know adores the 'Joyce Chen Saladacco Spiral Vegetable Slicer'. I love mine. This little gizmo allows you to turn fresh foods into Raw noodles. Yea, noodles! How fabulous is that! The Joyce Chen (shes also know as the Japanese 'Julia Child') Saladacco turns almost any hard or firm raw vegetable into fine spaghetti-like strands or incredibly thin, long ribbons. My recommendation is to start with zucchinis or cucumbers, NOODLE 'EM UP, then smother them in our vegan raw pesto sauce ( recipe here at our Diet For Living Center blog).

Where can you find this ingenious tool? Shop 'Joyce Chen Saladacco' at casa.com. They offer them for $18.99, on sale from $34.00. Your going to have so much fun!

HOW MUCH RAW IS ENOUGH!

95% of Raw Foodies eat a little cooked foods for a variety of reasons. Being less strict allows you to more easily eat out with friends and family, or sometimes a little cooked grains, served warm, helps you feel more grounded. Eating some red rice with a large Raw salad can keep you from bingeing on something crazy.

The main goal when eating Raw is to consume Raw greens, fruits and plant fats daily.

Here are the Mighty Three you want to aim for every day.....

TONS OF RAW GREENS: juicing, salads, smoothies, sprouts, baby greens, spinach, kale, chard, onion greens, sunflower greens, mint, and basil.

RAW FRUITS: These include the sweet fruits plus sour fruits such as cranberries, grapefruits, lemons and limes. Also considered fruits are tomatoes, red and yellow peppers, cucumbers and zucchini. Include sun-dried fruits such as almonds, figs, dates and raisins.

RAW PLANT FATS: Raw plant fats do not contain cholesterol. They are the good fats found in seeds, nuts, avocados, olives, extra virgin olive oil, coconuts, and coconut oil. These fats feed your nervous system and help you deal with stress.

All these foods are anti-inflammatory, packed with antioxidants, enzymes and life-force. They give you energy as well as keep you disease free. When you fill your daily diet with these foods, its easier to say NO to the WHITES, such as white flour, white sugar, white rice, white pasta, white cookies, white bagels, white pizza crust........

When we treat ourselves with respect and self-love, our bodies return the favor. We can reach unimaginable energy levels and live out our life dreams instead of spending time at the doctor's office.

Joez and I just returned from a two week vacation in Encinitas, a coastal town in San Diego. We lived there a while back for 10 years. The years have passed, but thanks to our Raw food diet, we can still put on our wet suits, grab up a boogie board and pound through the surf. When we catch the perfect wave, we glide to shore, and begin again. It's a wonderful world and I am glad to have the health and energy to enjoy it.
