THE POWER OF RAW REJUVELAC!

Rejuvelac is a fermented drink made from sprouting grains, such as wheat, rye, quinoa, barley, millet, buckwheat or others. It tastes a bit like fizzy lemonade. It is used to replenish intestinal microflora and to help rebuild digestion.

My mentor, the pioneer Raw Food educator Dr. Ann Wigmore, popularized making your own Rejuvelac at home. She was farm girl from Lithuania. It was important to her that the raw cleansing diet remain affordable so that we all can benefit from the potential miracles. Dr. Ann knew this first hand, having cured her own cancer with the Raw Food diet.

Making Rejuvelac at home is simple, cheap and assures you that you are ingesting live culture. Over the counter supplements are not necessarily the same species of bacteria that naturally live in your intestines or they may have died in transport, making the product useless. Also probiotics added to food are also often non-native to the vast microflora ecosystem that makes up your delicate digestive tract. With Rejuvelac you are sure you are getting the real deal, probiotics including lactobacilli and aspergillus oryzae.

My favorite is grain for Rejuvelac is Organic White Pastry Wheat because it is so easy to sprout.

Heres the recipe:

Step 1: Soak ½ cup of white pastry wheat in a quart Ball jar filled with filtered water over night.

Step 2: In the morning, drain the wheat and set the jar on its side so that the wheat can begin the sprouting process. In the evening rinse the wheat, drain and set on its side again. Repeat the process for two more days. By the third day the little 'tail' buds of sprouted wheat will have formed on your wheat berries. You're sprouted and ready to go.

 

 

 

 

 

 

 

Step 3: Rinse the wheat one more time. Then fill your Ball jar up with filtered water and let it set for 24 hours. I like to set my tonic on the counter top where I can be reminded to take care of it. I am an out of sight/out of mind kinda gal. Anywhere is fine as long as it's not in direct sunlight.

Step 4: That's it! The magic of fermentation has taken place while you were busy with other things. It's ready to drink. Drink a 6 oz glass a few times throughout the day. I like mine with a spritz of lemon. You can also use Rejuvelac in raw salad dressings and raw soups for extra probiotics.

Store any unused Rejuvelac in the fridge and drink over the next couple of days.

For many people, getting into Raw Foods is about weight loss. Making diet change is about allowing ourselves to learn new things. I know this is so in contrast to our standard diet training, but it's true. It is also true that a cleansing diet with Raw Foods will offer the most consistent and healthy results for your efforts.

After years of mainstream dieting and the endless disappointments, most people are delighted that they can eat guilt free food without counting calories, portions, fat or fat grams.

There is a lot of confusion about what makes a 'good fat'.

It's much more simple then you may think. Raw, plant-based fats are the 'good fats'. These fats are essential components to optimum health and a long life.

Here is the easy list of plant-based fats:

raw avocados

raw coconut oil, coconut flakes, and coconut butter

raw nuts and seeds (soaked over night to help you digest the nutrients)

pure, organic, cold pressed extra virgin olive oil

Speaking of winter, unless you keep your house over 75 degrees, you will notice coconut butter is solid if the room is cold. You'll need to warm it up to make it spreadable. Just set the jar in a pan of warm water for ten to fifteen minutes. Never, ever, put it in the microwave as that will kill the important nutrients.

MAKING RAW ALMOND MILK!

Every woman has heard that to avoid the ravages of osteoporosis they need to increase their calcium intake. We are often encouraged to drink more milk, eat more cheese and take antacid tablets.

But science now knows for sure that osteoporosis is not at first a disease of calcium deficiency. This may surprise you. It's a disease of excess protein. Dairy products are full of sulfur rich proteins. Sulfur makes extra acid in the blood stream. This tips your bodies acid-alkaline balance. To balance your system, the body robs what it needs from your alkaline bones. Over time a dairy heavy diet will thin bones and teeth, creating a future of osteoporosis.

Almond milk is a great choice for plant based, alkaline calcium. Store bought 'box' almond milk is pasteurized at high temperatures to maintain years of shelf life. Unfortunately high heat also destroys all of the important nutrients as well. The 'box' also lists 'carrageenan' as an ingredient. This ubiquitous additive is heavily red flagged for cancer. Dr. Andrew Weil states that "carrageenan has been found to cause ulcerations and cancers in the gastrointestinal tract". 'Box' almond milk also carries synthetic vitamins, so unnecessary, since raw almonds carry their own share of natural vitamins.

After celebrating with friends and family from Thanksgiving through the Christmas season, many of us get ready to kick our butts into gear for the New Year. By the time New Year's Day arrives, we have readied lists of resolutions to 'tackle or die trying'.

Yet many of us forget to add self love and self care with gentleness at the top of the list. I know, because I have kicked myself hard enough. But now my goals have changed. I am now looking for a softer touch to get the job done.

I have needed to lose ten pounds now for like the last six months. One of my plans is to eat way more raw chocolate. May sound crazy, but it's the ideal food to cover all the bases.

One of the reasons raw cacao powder is believed by health expects to be so powerful in aiding us to achieve optimal health has to do with its astounding wealth of antioxidants. It is believed to be the richest source of antioxidants known to Planet Earth. After a season of holiday food, you're going to need free radical control. Antioxidants neutralize free radical damage. (Remember: high heat kills 85% of the antioxidants, so keep it raw for the full benefits). Raw cacao powder also helps improve digestion, as it contains a type of fiber which helps cleanse the intestines and regulate the bowel.

OUR NEW MEXICO RAW HOT CHOCOLATE

1 cup homemade raw almond mylk

1 tablespoon raw cacao powder

1 tablespoon raw agave nectar

1 teaspoon pure vanilla

1/8 teaspoon hot chili pepper

Combine the raw almond mylk (made here), raw cacao, agave and vanilla into a blender and whip on high. Pour into a small, thick bottomed sauce pan on low heat. Using a kitchen thermometer to gauge the temp, bring the liquid to115 degrees. Remove from heat and pour into warmed cups. Sprinkle hot chili pepper on top to taste.

Raw chocolate goes well with chiles and red peppers. The added heat, not red hot, gives a little ping of surprise to the tongue. Rich truffles made of raw cacao are both gourmet and healthy, taking care of your needy holiday sweet. We use heart healthy raw coconut oil instead of heavy cream. This gives them a rich moist flavor you seek in the perfect truffle. Rolling them in shredded coconut or chopped nuts creates a simple finish.

 

 

 

 

 

 

 

I also like to give them as gifts to our forward thinking friends and family this time of year. To package, I use mini cupcake liners to cradle these little yummies. I have never found anyone who did not bite into one and smile. "Wow!" they say!

Our Chili Pepper Raw Chocolate Truffles

2 tablespoons raw coconut butter, melted

1 tablespoon raw agave

2 tablespoons coconut flour

2 tablespoons raw cacao powder

5 finely chopped dates

1/8 teaspoon red pepper

1 teaspoon pure vanilla

Simply mix all the ingredients in a glass bowl and form into balls. Roll the balls into finely ground coconut flour. Set into mini cupcake liners. Using a recycle box, arrange the chocolates. Give them to friends and family with love.
