THE MIGHTY RAW DRIED FIG!

I often feel confident with ancient foods. I feel they have stood the test of time. The seven basic agricultural products, called 'the Seven Species', are listed in the Bible. They are wheat (not the modern hybrid variety), barley, figs, grapes, olives, pomegranates, and dates. You can not help but notice that most of these foods are considered live foods.

Figs, one of the 'Seven Species', are frequently mentioned in the Bible. The remains of dried figs have been found from as early as the Neolithic period in Gezer, Israel and in the Jordan Valley. Dried figs were often strung into a chain or pressed into hard round or square shaped cakes called a develah and stored as a major source of winter food. The blocks of dried fig were sliced and eaten like bread. I am thinking that would make it the first gluten-free, vegan bread!

During the winter months, we all naturally seek out earthy, grounding foods that sustain us. That would be the wonderful, biblical dried fig. Highly alkaline, it's high in non-dairy calcium, concentrated minerals and the B-complex group of vitamins. The soluble fiber of the fig can attach to carcinogens that trigger cancer and flush them from the body. Scientists suggest eating plenty of dried figs to fight prostrate cancer.

Here at Diet For Living Center we like to start our day off with this natural detox food. I make it into a jam to be eaten on Our Raw DateNut Bread with raw coconut butter. Goes great with our fresh made beet cucumber juice. Vegan, Gluten Free Local YUM!

 

 

 

 

 

 

 

Our Mighty Raw Fig Jam is soooo easy to make!

1. Soak blond figs in fresh spring water over nite

2. Drain figs, cut off stem, and feed through the Omega Juicer with the blank on

3. Collect the pureed fig in a glass bowl.

4. Add a touch of raw agave, ½ teaspoon of fresh lemon juice and a pinch of lemon zest

5. Stores in a Ball jar in the fridge for up to a week!

With gratitude, Diet For Living Center thanks 'Albuquerque The Magazine' for carrying a two page spread on our Raw Food recipes for Thanksgiving on pages 168-169.

Thank-you, thank-you. It came out beautifully!

We were so excited to publish recipes that take gluten free, dairy free fresh raw ingredients and make them into creative pies, breads and cheeses. These are exciting times in the culinary arts.

 

 

Celiac affects 1 out of 133 children and adults. Thats 3 million people. The American Diabetes Association reports 25.6 million people diagnosed with diabetes with 79 million pre-diabetic. For these friends and family a table laden with sugar filled wheat foods can take the joy out of celebrating. Alternatives to our traditional favorites will come as a welcome relief.

People over all over the world celebrate holidays with special foods. That's the kind of recipes we published in 'Albuquerque The Magazine.' Please check it out for great ideas.

We would like to add one more super favorite. My grandmother would make it for all our family holidays and we loved her all the more for it—Lemon Meringue Pie. Only this is Raw Style. No sugar, eggs, dairy or gluten. Just plant based foods at their best. And one of the best things we have ever tasted.

Holiday Raw Lemon Meringue Pie

Gluten-Free Pie Crust

2 1⁄2 cups raw macadamia nuts soaked 8 hours and drained

1⁄2 cup well packed soft dates, chopped

1⁄4 teaspoon pure vanilla

1/8 teaspoon mineral salt

In a food processor, using the "S" blade, pulse together macadamia nuts, soft chopped dates, pure vanilla and mineral salt. Process until a moist, firm dough forms. Press crust mixture into a 9 inch deep dish pie plate coated with unscented raw coconut oil. Set aside.

Filling

2 ounces Irish Moss (cut up small, soaked over nite and drained before use)

1½ cups fresh organic lemon juice

¾ cups raw light agave nectar

pinch of salt

In a high powered blender on high speed (we use a Vita Mix), blend together the Irish Moss and lemon juice until it is thick and smooth, the color of cream. Add the agave and continue to blend. Pour into your gluten-free Macadamia Pie Crust. Set in the fridge for three hours.

Holiday Healthy Meringue

1 ounce Irish Moss (cut up small, soaked over nite and drained before use)

½ cup spring water

1 cup fresh baby coconut milk (check the freezer section of your local Asian store)

½ cup baby coconut meat (check the freezer section of your local Asian store)

½ cup soaked cashews

¼ cup light weight raw agave

1 teaspoon pure vanilla

1½ teaspoons lecithin

½ cup coconut butter

Blend the Irish Moss and spring water until smooth, thick and creamy. Add the coconut milk, coconut meat, cashews, lemon juice vanilla and salt. Blend all ingredients until smooth. Add the lecithin and coconut butter and continue blending. Pour in a glass pan and set in fridge, allowing the merengue to set-up for three hours. When ready, spoon on top of pie, spread and create peaks with a spatula. Enjoy!

EASY VEGAN ARTISAN CHEESE!

When you tell people you eat a great percentage of your food raw, you often get two responses: Open curiosity or shut down tight fear. "How will I get my protein?", they ask, panicked. Fair enough question.

Protein is essential. Without protein, our bodies cannot function properly.

Yet the fact is, as American's, we have been getting too much protein from animal products. It has begun to turn on us, with rising numbers of heart disease, arthritis, osteoporosis and Alzheimer's. Often protein rich nuts, vegetable, fruits, sprouts and seeds give us just the right amount in a natural alkaline form.

I love cheese and I would hate to do without it. Right now I am deep into vegan, dairy-free cheeses that are heart healthy and excite the palate. Cruelty-free fromage, with no additives or binders, just pure natural ingredients. I do better on these foods.

I had my editor over for lunch this week. I am writing an e-book on cleansing called our 'Perfect Whole Body Cleanse'. I served her a raw bagel with scrumptious raw home made vegan cheese, end of season red pepper and heirloom tomatoes from the garden topped with microgreen lettuce from the green house. I also served miso soup, and , for dessert, coconut cream tartlets with gluten free macadamia crust.

 

 

 

 

 

 

 

 

OK I was showing off a bit but in a good way. I get sooooo excited about all the ways you can serve raw food. She brought raw cacao candies so delicious they would make you weep, but that's another story.

Here's the recipe for the vegan raw cheese I served.

VEGAN ARTISAN CHEESE

1 cup raw cashews, soaked in water overnight

¼ cup and two tablespoons rejuvelac ( I blogged on making rejuvelac a few postings ago; here's the link. It adds healthy probiotics and gives the cheese it's sharpness)

1 tablespoon nutritional yeast

1 tablespoon fresh squeezed lemon

½ tablespoon organic lemon zest

a pinch of sea salt to taste

Drain the cashews and add to a Vitamix blender with the rejuvelac and lemon juice . Begin to process on low and turn up the speed as you go. Add yeast, zest and salt and blend until smooth. Transfer your mixture into a glass (never metal!) and cover.

Allow your cheese to sit at room temperature for at least 24 hours or more to mature. Serve or store in fridge for up to a week.

If you are willing to take the leap, I guarantee that 'Our Raw Custard Pumpkin Pie', with gluten-free macadamia nut crust, will thrill your family and wow your guests.

 

 

 

 

 

 

 

OUR RAW CUSTARD PUMPKIN PIE

GLUTEN FREE CRUST

1 1⁄2 cups raw baby coconut milk

3⁄4 cup raw coconut butter

1⁄4 cup raw agave

2 ounce Irish moss soaked overnite and drained

2 tablespoons lecithin

1 tablespoon pure vanilla

4 tablespoons pure maple syrup

1 tablespoon pumpkin pie spice

1/8 teaspoon mineral salt

Take the butternut squash and feed it through an Omega Juicer with the blank in place to puree. Set aside. In a high power blender, mix together baby coconut milk and the Irish moss until dissolved and it becomes a thick paste. Add raw agave, maple syrup, butternut squash, coconut butter and vanilla. Blend at high speed until the mixture is will incorporated. Add the lecithin and pumpkin pie spice and blend into a custard consistency. Pour into the prepared crust and set in the fridge for about two hours. Once it has set, decorate with raw pecans. Serves about 12 people.

It's not our imagination. The wheat we eat today and feed our children has changed dramatically. It's a genetically hybridized strain of high-yielding dwarf wheat created in 1970 by a genetic engineer. 1. Omega juicer with blank on

2. 1 cup berry blend

3. 5 dates soaked over night

4. 1 teaspoon raw agave.

5. Feed the berry blend and dates through the juicer into a glass bowl. Add agave and stir. Store in a glass jar in fridge for a week. Stores well in the freezer for up to a month. Enjoy!
