NEW BEGINNINGS

Our graduate student Joelle Vadas has opened her own healing center 'RawFully-Healthy' in Melbourne, Australia.

GRACE

Our 'new beginning' really started eight years ago. I may never have found my way to Raw Living Foods, except I was desperate to solve my own declining health. I had a tumor growing in my uterus with no signs of slowing down.
Detoxing with Raw Foods to restore order in the body and heal degenerative disease was not my original idea. A plan and protocol was first taught by the late, great healer, Dr. Ann Wigmore. She had healed her own cancer using Raw and fermented foods. Before her miracle, she had been a white pastry junkie. This was a woman I could relate to and trust. It was her belief that no matter how sick you are, you can restore your own health if you give your body the right tools to work with. That gave me the courage to try. I owe my healing success exclusively to her work.
My quest to get well led me to new lands I didn't know existed. It granted me grace and gifts I hadn't expected. I joined the plant-based movement to get myself back on track. It has transformed my health, as well as giving my life clearer purpose and passion.
Joseph, my husband, a nurse for twenty years, watched the new foods change and transform my health. He too would bravely confront the foods that were causing him harm. My household would wake up 100%.
Together we began by building a Raw Food Meet-up group in our community. The first year there were about ten to fifteen people. Today we have 360 members. People would come to us and say they wanted to go deeper with the diet, so we created Diet For Living Center and began classes teaching the 'Raw Food Basics'. We wanted to spread the word even further, make the circle bigger.
So we added 'Diet For Living School of Natural Nutrition', with global reach. The school is Board Certified by the American Association Of Drugless Practitioners (AADP), allowing us to be recognized as a Higher Educational Institute. As a graduate of our program, if you choose, you are eligible to receive international Board Certification from AADP. Their Holistic Health Practitioner Certification helps you instill trust while expanding your professional development. Your success is important to us.

THE BIG 'WOW' NEWS

According to the National Centers For Disease Control and Prevention "more than 133 million adults in America are living with at least one chronic disease, such as obesity, diabetes or cardiovascular disease. The cost of managing their care is estimated at an astounding $270 billion a year." These are not just numbers. These are our friends, family, loves ones, our communities and maybe even us. The National Center goes on to say "growing evidence demonstrates these diseases can largely be reduced or prevented through education and behavioral changes." It's easy to conclude that the greatest impact on the future of health today and tomorrow will be teaching people to eat lifesaving innovative foods.
These are exciting times to be a Holistic Health Educator. New York City doctors are writing prescriptions for fruits and vegetables for obese and over weight patients. Called the 'Fruit and Vegetable Prescription Program', patients get prescribed 'Health Bucks', redeemable for produce at more than 140 New York Farmer's Markets. 'WOW'! The program has now expanded to seven other states on the Eastern Seaboard and continues to grow. How exciting is that!!! No gimmicks, pills or potions, no mysterious supplements. When eating Raw Foods and fresh pressed juices healed my tumor, I wanted to shout, share, tell the world, hire a marching band, maybe a few well placed banners, that said 'RAW FOODS HEAL'.

If you are on a journey of diet change with Vegan Raw Foods, you're going to feel better, look better, have more energy, be excited. Your going to want to tell friends and family about the foods your eating, about all the positive change your experiencing. It's only natural. We're social beings. We've learned from one another since the beginning of time.

 

 

GOING EASY ON FAMILY
Yet right now, with so many people in trouble from eating the Standard American Diet, there is a lot of guilt, shame and confusion floating around. This confusion has people defensive. No one wants to feel attacked by the people they are close to. And of course we don't want to make people we care about feel uncomfortable. Because part of the 'New Food Movement' is helping us connect with ourselves, experience less guilt when we eat, learn new methods of self care and self love.

GET CREATIVE
Sooooo, how do you share your exciting new life with friends, family and co-workers without going into 'fix-it' mode? With imagination, creativity, flexibility. The Raw Food Lifestyle has had twenty years to evolve out of oranges, bananas, and lentil loaf. The foods are fun, inventive, exciting and delicious. My suggestion is to learn to make a few 'WOW' foods that put a smile on the faces of your loved ones. Here are a few of of the winners that have worked for me, because I have no intentions of eating alone.

Learn to make a few Raw desserts that make friends weep. I got the Raw pie thing going. I'm welcome everywhere if I gotta pie.

CUCKOO FOR COCONUT WATER!

Did you buy into the hype about bottled, canned and boxed coconut water? In the past five years the industry has exploded and found its way into the hands and heart of many a yogi and yogini. Bottles sit next to yoga mats in studios across the country.

The big 'friendly"'coconut water companies have supported many events and studios. Coconut water is a hot commodity, especially in Hot Yoga, where students perform their routines in rooms heated to more then 100 degrees.

But now the big coconut companies are being hit with class-action lawsuits. Their labels lied.

To start with, boxed, bottled and canned coconut water is 100% pasteurized. That means at least 275 degrees. Good-bye benefits. Just empty liquid.

What is true is coconut water, the clear liquid straight out of a young green coconut, is one of the best foods for humans on Planet Earth. Super, super nutritious, easy to digest, it's a staple in tropical countries from Colombia to India. Sometimes you can buy it from street vendors here in the US in urban Latino and South Asian neighborhoods. Here in ABQ, NM, they sell it ready to sip at our local Ayurveda restaurant, Annapurna. Yum.

But it's not so hard to drink raw baby coconut water at home. Whole Foods and Asian markets sell baby coconuts in the cold section of the store.

            

Here's how easy it is to prepare. Nature designed the baby coconut so that we can get inside to access this super food liquid.

RAW COCONUT LOVE

1 Baby Coconut

1 kitchen cleaver

1 glass or plastic straw

Set the baby coconut on its side, holding it with one had around the bottom (way away from the cleaver).

With the cleaver in the other hand, slowly hack around the pointy top till it gives way. This takes all of about one minute. When you have made entry, quickly turn the coconut upright before you lose the liquid. Pop your straw in the hole and sip with a big smile on your face.

   

 

 

 

 

 

 

 

It is so delicious!

When you finish, return to the cutting board and make a the hole larger so that you can eat the soft, lovely coconut meat inside. It taste like creamy-dreamy custard. Baby coconut is a healthy drink and snack all in one.

95% of Raw Foodies eat a little cooked foods for a variety of reasons. Being less strict allows you to more easily eat out with friends and family, or sometimes a little cooked grains, served warm, helps you feel more grounded. Eating some red rice with a large Raw salad can keep you from bingeing on something crazy.

The main goal when eating Raw is to consume Raw greens, fruits and plant fats daily.

Here are the Mighty Three you want to aim for every day.....

TONS OF RAW GREENS: juicing, salads, smoothies, sprouts, baby greens, spinach, kale, chard, onion greens, sunflower greens, mint, and basil.

RAW FRUITS: These include the sweet fruits plus sour fruits such as cranberries, grapefruits, lemons and limes. Also considered fruits are tomatoes, red and yellow peppers, cucumbers and zucchini. Include sun-dried fruits such as almonds, figs, dates and raisins.

RAW PLANT FATS: Raw plant fats do not contain cholesterol. They are the good fats found in seeds, nuts, avocados, olives, extra virgin olive oil, coconuts, and coconut oil. These fats feed your nervous system and help you deal with stress.

All these foods are anti-inflammatory, packed with antioxidants, enzymes and life-force. They give you energy as well as keep you disease free. When you fill your daily diet with these foods, its easier to say NO to the WHITES, such as white flour, white sugar, white rice, white pasta, white cookies, white bagels, white pizza crust........

When we treat ourselves with respect and self-love, our bodies return the favor. We can reach unimaginable energy levels and live out our life dreams instead of spending time at the doctor's office.

 

 

 

 

 

 

 

Joez and I just returned from a two week vacation in Encinitas, a coastal town in San Diego. We lived there a while back for 10 years. The years have passed, but thanks to our Raw food diet, we can still put on our wet suits, grab up a boogie board and pound through the surf. When we catch the perfect wave, we glide to shore, and begin again. It's a wonderful world and I am glad to have the health and energy to enjoy it.

HOLY RAW BASIL

Cherished and adored in India, a basil patch is common outside the doorways of many homes. It is used in morning prayers to insure personal health, spiritual purity and family well-being. Strings of beads made from the plants stems are used in meditation to give clarity and protection. For three thousand years, Holy Basil has been considered one of India's most powerful herbs. Everything associated with the plant is Holy, including the water given to it and the soil in which it grows. All are part of the great blessings of life.

So often we now find that ancient wisdom proves out 100% in the modern laboratory. It is now medically proven that the antioxidants in basil provide powerful anti-cancer protection. Basil also contains flavonoids that help shield cell structure from radiation damage. So if you have a friend or family member who is in the middle of cancer treatment, they are  going to want to load up on Holy Basil.

Keep it Raw. This plant hates the cooking process. Cooking changes it's chemical properties and  turns the leaves brown. We at Diet For Living Center grow big tubs of it. Many greens hate the middle of the summer, but Holy Basil enjoys the heat and sun. Its soooo easy to grow. You don't need to be a big time farmer to enjoy the monster benefits of this super food. Just grab a few plants from your 'Trader Joe's' for $2.99, or from your farmers market. Set them in decorative pots on the patio or window sill. Bam, your ready to go.

                                                                            

Your going to get so excited you will want to make your own fresh raw vegan pesto. Here is our recipe.

OUR HOLY RAW VEGAN PESTO

½ cup raw pine nuts soaked over nite

¼ cup extra virgin olive oil

3 cloves fresh garlic

2 tablespoons fresh lemon juice

A hearty handful of fresh basil leaves

a pinch of sea salt

In a small table top processor, add the garlic, lemon, salt and olive oil. Pulse until the garlic, lemon, salt, and oil are one. Drain your pine nuts and add to the processor. Pulse again until the whole mixture is creamy. With kitchen shears, cut up your basil leaves and add slowly. You may need to add a bit more olive oil to keep it going. When everything is thick and green you have got it. Store in a glass jar in the fridge. It also stores well in the freezer if you can't eat it all right away.

MIGHTY RAW MISO DRESSING!

The word 'toxin' has it's roots in the Greek word 'toxicon', which means poison. Toxins are any substance of a chemical or organic nature foreign to the human body which may eventually cause disease or harm.

Modern environmental toxins have a list a mile long: tap water, solvents, food additives, dyes, drugs, household chemicals, personal care products...and now GMO's, built into the DNA of our foods.

The National Cancer Institute has a booklet called "Cancer and the Environment". It estimates that as many as two thirds of all cancer cases are linked to our modern environment.

What can we do??? First off we add plenty of cleansing foods to our diet and drink cleansing raw juices that flush the system. We love wheatgrass juice, one of the most potent cleansing foods on the planet.

Raw Miso is a super food when it comes to cleansing the body of toxins.

Here's a fabulous Raw salad dressing recipe one of our ABQ RawFood Meet-up members brought to our last PotLuck. Your going to want to whip this up and put it on everything. It's so killer yummy!!!

ORGANIC GINGER MISO DRESSING

½ C South River White Miso

1/3 C raw agave nectar

1/3 C Bragg's' Cider Vinegar

1/3 C organic sesame oil

¼ C fresh lemon juice

                                                1 ¼ C chopped ginger

Blend all ingredients in a VitaMix or high speed blender until smooth and creamy.

YUMMY RAW BREAKFAST ALTERNATIVE!

We naturally seek out healthy alternatives to breads that are a bit sweet with a whole lotta nurturing. Many raw breads contain flax, giving them a strong flavor, making them a touch bitter for our taste buds first thing in the morning.

I'd like to give you our recipe for our 'Raw Date Nut Bread'. It's so perfect that we have been eating it now for five years first thing in the morning.

 

 

 

 

 

 

 

It's made from buckwheat groats. Don't be fooled by the name. Buckwheat groats are a seed, an edible flower seed, not a grain. This gentle tasting food contains no gluten so it can be eaten by people with celiacs disease. High in fiber, it speeds up transit time, unlike the gluten filled wheat bagels, breads and buns that add to our constipation problems. It contains all eight amino acids, making it high in plant based proteins. It's probably the most important transformative food we have added to our diets.

Our Raw Date Nut Bread

1 cup buckwheat groats

½ cup macadamia nuts

½ cup organic raisins

10 dates

¼ cup raw honey

¼ cup liquid

Soak buckwheat groats, macadamia nuts, raisins and dates in filtered water for 8 hours or over night. Drain before use. Feed your soaked foods through an Omega juicer with the blank on. It will come out as a lovely dough. Stir in the honey and liquid until it is smooth and creamy. Add a bit more water as needed. Using a large spoon, set dollops of dough on the dehydrator sheet. Use a spatula to smooth them out into 1/8th inch thick pancake size breads. Dehydrate in the Excalibur at 115 degrees for 7-8 hours.

Tip: I soak the ingredients in the morning, make the dough in the evening, dehydrate that night and voila! We have them ready next morning to greet us. This recipe make about 12 breads.

BRING IN THE NEW YEAR WITH RAW CHOCOLATE!

After celebrating with friends and family from Thanksgiving through the Christmas season, many of us get ready to kick our butts into gear for the New Year. By the time New Year's Day arrives, we have readied lists of resolutions to 'tackle or die trying'.

Yet many of us forget to add self love and self care with gentleness at the top of the list. I know, because I have kicked myself hard enough. But now my goals have changed. I am now looking for a softer touch to get the job done.

I have needed to lose ten pounds now for like the last six months. One of my plans is to eat way more raw chocolate. May sound crazy, but it's the ideal food to cover all the bases.

One of the reasons raw cacao powder is believed by health expects to be so powerful in aiding us to achieve optimal health has to do with its astounding wealth of antioxidants. It is believed to be the richest source of antioxidants known to Planet Earth. After a season of holiday food, you're going to need free radical control. Antioxidants neutralize free radical damage. (Remember: high heat kills 85% of the antioxidants, so keep it raw for the full benefits). Raw cacao powder also helps improve digestion, as it contains a type of fiber which helps cleanse the intestines and regulate the bowel.

Considered a true superfood, it's great for energy and helps with cravings. We sweeten it with raw agave nectar which has a GI of 28. This is what I mean by the 'kind gentle path'.

We are toasting in the New Year and beyond with a cup of 'Our New Mexico Raw Hot Chocolate'. It's made with homemade almond mylk and is alkaline and dairy free. Please join us.

OUR NEW MEXICO RAW HOT CHOCOLATE

1 cup homemade raw almond mylk

1 tablespoon raw cacao powder

1 tablespoon raw agave nectar

1 teaspoon pure vanilla

1/8 teaspoon hot chili pepper

Combine the raw almond mylk (made here), raw cacao, agave and vanilla into a blender and whip on high. Pour into a small, thick bottomed sauce pan on low heat. Using a kitchen thermometer to gauge the temp, bring the liquid to115 degrees. Remove from heat and pour into warmed cups. Sprinkle hot chili pepper on top to taste.

I often feel confident with ancient foods. I feel they have stood the test of time. The seven basic agricultural products, called 'the Seven Species', are listed in the Bible. They are wheat (not the modern hybrid variety), barley, figs, grapes, olives, pomegranates, and dates. You can not help but notice that most of these foods are considered live foods.

Figs, one of the 'Seven Species', are frequently mentioned in the Bible. The remains of dried figs have been found from as early as the Neolithic period in Gezer, Israel and in the Jordan Valley. Dried figs were often strung into a chain or pressed into hard round or square shaped cakes called a develah and stored as a major source of winter food. The blocks of dried fig were sliced and eaten like bread. I am thinking that would make it the first gluten-free, vegan bread!

During the winter months, we all naturally seek out earthy, grounding foods that sustain us. That would be the wonderful, biblical dried fig. Highly alkaline, it's high in non-dairy calcium, concentrated minerals and the B-complex group of vitamins. The soluble fiber of the fig can attach to carcinogens that trigger cancer and flush them from the body. Scientists suggest eating plenty of dried figs to fight prostrate cancer.

Here at Diet For Living Center we like to start our day off with this natural detox food. I make it into a jam to be eaten on Our Raw DateNut Bread with raw coconut butter. Goes great with our fresh made beet cucumber juice. Vegan, Gluten Free Local YUM!

You can't fool anyone with a plate of carrot sticks over the Holidays. We all want sweet treats that look and feel like a celebration. No matter how brave we are during the rest of the year, culinary fearlessness can feel like jumping off a cliff during the Holidays.

If you are willing to take the leap, I guarantee that 'Our Raw Custard Pumpkin Pie', with gluten-free macadamia nut crust, will thrill your family and wow your guests.

 

 

 

 

 

 

 

OUR RAW CUSTARD PUMPKIN PIE

GLUTEN FREE CRUST

2 1⁄2 cups raw macadamia nuts soaked 8 hours and drained

1⁄2 cup well packed soft dates, chopped

1⁄4 teaspoon pure vanilla

1/8 teaspoon mineral salt

In a food processor, using the "S" blade, pulse together macadamia nuts, soft chopped dates, pure vanilla and mineral salt. Process until a moist, firm dough forms. Press crust mixture into a 9 inch deep dish pie plate coated with unscented raw coconut oil. Set aside.

FILLING

3 cups fresh organic butternut squash, peeled and pureed

1 1⁄2 cups raw baby coconut milk

3⁄4 cup raw coconut butter

1⁄4 cup raw agave

2 ounce Irish moss soaked overnite and drained

2 tablespoons lecithin

1 tablespoon pure vanilla

4 tablespoons pure maple syrup

1 tablespoon pumpkin pie spice

1/8 teaspoon mineral salt

Take the butternut squash and feed it through an Omega Juicer with the blank in place to puree. Set aside. In a high power blender, mix together baby coconut milk and the Irish moss until dissolved and it becomes a thick paste. Add raw agave, maple syrup, butternut squash, coconut butter and vanilla. Blend at high speed until the mixture is will incorporated. Add the lecithin and pumpkin pie spice and blend into a custard consistency. Pour into the prepared crust and set in the fridge for about two hours. Once it has set, decorate with raw pecans. Serves about 12 people.

Whether we take big steps or baby steps the victory can feel the same. We move closer to our authentic selves. It can help us feel brave, honest, true.

That's how I felt when I became a Raw Food Chef and Holistic Health Coach. It helped me focus less on problems and more on solutions. It improved my own life while I helped others organize their lives. As I became educated and grew in confidence I was able to offer advice to people with cancer, diabetes, chronic fatigue, addictions. Their lives began to improve, and some, like me, healed from top to bottom from the power and life-force of the Raw Food diet and its ability to cleanse and heal at the cellular level.

Probiotics, the friendly bacteria that keep our intestinal health in balance, are not made in the body. We must extract them from external sources, our food and drink. The problem is that modern food is mostly pasteurized, killing these beneficial work horses in great numbers. Captain James Cook, the famous eighteenth century explorer, was so aware of the serious need for live probiotics foods that he packed sixty barrels of kraut for twenty seven months at sea for his crew.

Probiotics are important components of our immune system. Seventy five percent of our immune system sits in the intestines. Probiotics work by sitting at receptor sites, blocking unhealthy invaders, protecting us from illness. When our probiotic bacteria level is low, they are not available to sit at these sites. The result is an abundance of pathogens that create conditions for disease. Poor gut health leads to headaches, migraines, anemia, bone health, chronic fatigue, cancer........the list goes on. We cannot remain healthy day after day, year after year, without them.

Raw fermented foods are literally alive with flavor, nutrition and necessary probiotics. In the Raw Food Diet we know live fermented foods are the best way to keep these little sumo wrestlers up and going strong. Pasteurized yogurt will not do the trick. Probiotic supplements not stored in the fridge contain no life force to get the job done. I blogged earlier on making small batches of sauerkraut on your countertop. So easy.

Here's a recipe for making super easy Rejuvelac, a fermented drink rich in healthy microorganisms and lactic acid. It's an inexpensive drink that you can sip daily as a tonic.

OUR HOME MADE REJUVELAC

1. Using a quart Ball Jar, soak 3 tablespoons millet in fresh water for 8-10 hours

2. Drain and rinse seeds with fresh water three times a day for 2 days (I like to keep mine by the sink or I may never think of them again)

3. Rejuvelac is made using your sprouted grain and one quart of filtered water. Allow to sit on your countertop for 48 hours to mature. When ready, pour yourself 6 ounces and drink up. You may add a little fresh lemon for flavor and as a preservative to keep the Rejuvelac fresh longer. Store in fridge for up to three days.

Out of the blue I have become totally crazy about eating radishes, growing radishes, sprouting radishes, researching radishes.......Turns out I am not alone.

The radish was once so valued in Greece that gold statues were fashioned in it's image. In parts of Mexico, Christmas is celebrated with, 'Noche de Los Rabanos', The Night of the Radish. There the birth of Jesus is celebrated with radish carving contests.

Turns out the cleansing radish is known to be effective in cancer prevention, fighting oral cancer, colon cancer, and intestinal cancer, as well as kidney and stomach cancer. The natural juice in the radish helps soothe the digestive system and detoxify the liver. How did this all important little guy get by us?! I seldom see radish on an American plate, and, if any, only a few slivers on the top of a salad.

I am always on the lookout for new tastes for my Raw Foods Diet, but I may not have found my way to this medicinal food, common since Ancient Egypt before the pyramids, if it wasn't for the super cute 'Easter Egg Radish'. They are so colorful; pink, red, purple, sometimes white, and you can't just walk by them at the local 'Co-op' and 'Whole Foods' produce sections. You have to try them!

 

This is a new spin on the radish. Plump,SWEET and juicy, I was hooked. Eating them can be as easy as cutting up a bunch on salad or cutting them in half and dipping them in a little sea salt and popping them in your mouth. Takes care of the need for crunchy, salty snacking in the Summer while keeping it raw and lite.

Since my discovery, I have started sprouting radish seeds, so easy for growing micro greens for salads. So Easy! Check out your health food store, co-op or Whole Foods for the colorful Easter Egg Radish, and the China Rose sprouting seeds. It's a great 'surprise' food.

I must say I would never, ever have stayed with Raw Foods if I had to give up bread! I would have cracked. It would have been an absolute deal breaker. With great relief, it turns out I have so many fabulous choices! Raw crackers, flat breads and bagels, all made with nuts, seeds and dried fruits. Foods that cleanse, rebuild, restore. And best of all, unlike cooked breads, I don't have to wear them on my butt and hips.

 

 

 

 

 

 

 

 

Sun dried and dehydrated breads were the simple diet of our ancestors before we became overly dependent on cooked foods, and before mystery wheat strains were made in laboratories, causing us wheat intolerance and Crohn's Disease. Historically, Essene bread is one of the earliest varieties of bread.

 

 

 

 

 

 

 

 

 

 

 

 

I love this quote from the "Essence Gospel of Peace," the 1st century Aramaic manuscript describing the making of the perfect bread. Scholars believe the teacher is Jesus Christ, instructing his flock on how to make 'Live Bread' with all the vitamins, minerals, and enzymes intact. "How should we cook our daily bread without fire, Master?" asked some. "Let the Angels of God prepare your bread. Moisten your wheat, that the angels of water may enter it. A period of cleansing on fresh live foods and raw juices offers hope of a happier, healthier life. Detoxing the body and mind can heal neural pathways, helping us free ourselves of harmful habits, allowing us to set up new positive behaviors. This 'reset' of our inner compass lets us see the world and ourselves in new ways

It's the natural order of life that we cleanse and detox our bodies at this time of year. With the warmer weather, we crave to feel lighter and healthier.

A simple daily salad, delicious and refreshing, is a great place to start. Sweet baby lettuce leaves are my favorite, tossed with a blended raw salad dressing. The key secret to making a beautiful, yummy salad is to start with the best greens you can find. Greens should look firm and perky. Avoid leaves that are yellow or brown. Tear greens gently with your hands. This prevent the leaves from bruising.

 

 

 

 

Often where people go wrong is adding too much dressing. You want your salad dressing to marry with the greens. Enhance, not drown them.

 If you are growing a variety of lettuce in flats and boxes, use only the small tender leaves in your salad. Save the larger outer leaves to add to carrot, apple and lemon for your morning fresh juice. This way no part of the plant will be wasted. The leaves of lettuce are a store house of anti-cancer, anti-oxidants and phytonutrients. Raw lettuce provides daily Vitamins A and C, beta-carotene, iron, magnesium and potassium.

What is the prediction for the future? Everything that can be routinized and codified will eventually be done by machines, ie computers.

The good news is social and emotional intelligence are what we humans are uniquely good at. And no machine can take that away from us. No machine can duplicate the generosity and satisfaction of feeding others, caring for their well being and connecting with their inner needs.

Machines cannot protect the environment or feel that immense longing when we have been cut off from Nature for too long. Machines will never appreciate a nutritionally superior, splendid salad grown from seed and picked by hand, or the deep sense of contentment we feel from making foods that cleanse, restore and rebuild the body. That and much, much more is what humans are uniquely good at. It can never, ever be replicated by machine.

That is why it is the perfect time to be a 'Raw Foods Educator'. As life expectancy grows, so has the need for diet change to improve our quality of life. Breasts have allowed us to advance as a species. With their super rich stores of Raw milk, they allow babies to be born less mature, with smaller bodies and smaller brains, that finish their development after birth. Producing smaller babies meant that women's hips could be narrower, assisting in our ascent into bipedal creatures.

It turns out human females are the only mammals to have full time breasts. The rest of the mammalians grow breasts only during lactation. After weaning their young the breasts deflate until needed.

Due to the changes in lifestyle as we have rushed to claim ourselves in the modern world, women's breasts have become increasingly at risk for cancer. Breasts, made up of large amounts of fat tissue, are perfect as resources to feed hungry babies, but they can also be repositories for toxins and pollutants that can store there for years. These repositories can become cancerous, and contribute to the seventy eight thousand mastectomies done every year.

Certain chemicals we encounter or ingest mimic estrogen, replacing the natural hormone at the cellular level. For example, bisphenol A is a plastic additive found in the linings of food and beverage containers which does just this. It is estimated that the average American consumes fourteen pounds of these chemicals a year. As our bodies are not designed to separate these chemical products from natural products, a burden is put on our system to get the sustenance it needs and get these toxins out of the body. This can be an exhausting process.

RAW CACAO TEMPLE BALLS

2 Tablespoons coconut butter

1 Tablespoon raw agave

2 tablespoons coconut flour

1 tablespoons raw cacao powder

2 tablespoons walnuts chopped

2 tablespoons raisins

Pinch of salt

1/8 teaspoons pure vanilla

Mix all ingredients together in a glass bowl till smooth. Form into balls and set in the fridge for 30 minutes. Makes 9-10 balls.

By 2015, an estimated twenty million of us will die from cardiovascular disease if we refuse to make change in our diet. It's now the leading cause of death among us.

Dr. Oz, our favorite doctor guru (with good reason, the guy's fabulous!), says that to take charge of your situation you need to concentrate on a "plant-based diet loaded with fruits and vegetables" (key word "loaded"!). One of the reasons for that is, unlike meat and dairy, there is no cholesterol in plant based foods. The other reason is that plant based foods control your weight naturally. Just a small commitment to losing ten pounds can ward off the deadly HD. How easy is that! But when most of us take an honest look at our diets, the first thing missing is the 'heart friendly foods'. So "uh oh! gotta get it together".

It is my belief that we don't consider the idea of fruits and vegetables 'fun'. And there is no ignoring it. As a species, we like our food 'fun'.

 

  

 So what could be more fun than raw, dairy-free, gluten-free cheese balls. Cute and Yummy. You can invite guests over on a Friday nite and serve them with love and maybe organic wine!

 

HEART HAPPY RAW CHEESE BALLS              

½ cup macadamia nuts (soaked overnite)

½ cup pine nuts (soaked overnite)

1 cup purified water

4 cloves fresh garlic

1/8 teaspoon Bragg's Liquid Aminos

1/8 teaspoon cumin and tumeric

pinch of mineral salt

¼ cup finely chopped onion greens

To make vegan plant based cheese:

Drain the macadamia and pine nuts and add to blender with 1 cup purified water. In your VitaMIx Blender begin your blending on low setting and work up to the high power setting till the nuts turn into a smooth paste. Pour the nut paste into a nut milk bag and hang over a bowl till all the liquid is drained. A great way to do this is to leave it hanging overnite. This way friendly airborne lactobacillus organisms will automatically inoculate your cheese. When you return in the morning you will have cheese! How easy is that!

                                                                             

Now to prepare the balls:

In a glass bowl add pressed garlic, walnut meal, onion greens, spices and salt. Form the mixture into balls and dehydrate at 105 degrees in your Excalibur Dehydrator for twelve hours so that a crust forms on the outside. I am crazy about designer tooth picks so you may want to add those before you begin the drying process. To finish it all off, set it on a party plate with mint leaf garnish.

This recipe makes six balls so you may want to double it. Good luck. Let me know how it goes.

From the moment I began my relationship with my Excalibur Dehydrator it was Love!

Learning to dehydrate has been THE game changer in my Raw Food diet. It adds extra nutrients and satisfies cravings for crunchy foods and sweet foods. Baking foods renders unusable one half the available protein and all or nearly all of the vital nutrients and enzymes, whereas dehydrated foods are dried slow at low temps, so you can just relax and enjoy those nutritional benefits.

Have you seen the movie "Fat, Sick and Almost Dead"? Many people have, and many people ask what I think of it. So here goes.

First, if you haven't seen it, it's a documentary about this high powered Australian business man who has lived and eaten a high powered diet that has left him fat, sick and almost dead. In the movie he is traveling around the United States with a juicer in the back of his 4x4, living off just raw juices for sixty days while interviewing Americans about their eating habits.

This week the winds blew in gusts of 100 miles an hour in LA, closing down LAX airport, before heading to us in New Mexico. My little cold frames were snug and safe, my little greenhouse alive with beet greens, rainbow chard and onion greens. When the winds stopped, then came the snow. Yet all was well in my winter garden. For me this was so empowering, more than enough encouragement to keep me going until Spring!

It's very 'American' to consume protein from foods with large quantities of fat. This has allowed heart disease to be one of the number one killers in the modern world.

There is nothing new about high fat diets with a doctor's approval. In the 1920's, doctors advocated a minimum of three Porterhouse steaks a day, and declared that the only two perfect foods were "fresh meats and water". Dr. Irwin Stillman, a respected doctor at the time, wrote "Doctor's Quick Weight-Loss Diet", convincing his patients to eat meat, eggs and cheese. Suffice it to say, Stillman died of a heart attack.

Earth's Northern Hemisphere contains most of the planet's land and roughly 90% of it's human population. In agrarian terms this means that food is planted in the spring, grows throughout the summer, and is harvested in the fall. The general idea of Thanksgiving or 'Giving Thanks' at harvest's end is so ancient as to be pre-historic. Dates have changed only a bit from culture to culture depending on the onset of winter, yet the theme is the same. It is a time to pray for peace and give thanks for our bounty and many blessings.

Fresh Sunflower seeds are a favorite in the Raw Food diet. They are so sweet and yummy, and one of the richest in nutrients of all the sprouts. These little gems are a good source of Protein, B complex vitamins and Vitamin E, as well as significant amounts of Calcium and Iron.

Pine nuts are the edible seeds of the pinon tree. Harvesting is very labor intensive, as the nuts are actually from inside the pine cone. The little white 'seed' is so yummy that it has been worth the effort since the Paleolithic period.

I guess that makes me a late bloomer, because I only discovered it since I got into Raw Foods six years ago. We give thanks and gratitude to all the hard work of harvesting, because we adore this nut in our raw recipes of raw cookies, crackers, spreads and pestos.

"WOMEN", the popular magazine that addresses Women's Issues, particularly concerning cancer and cancer prevention, just included in its summer 2011 publication an article on "The Wonders of Raw Chocolate."

Great News! The world is changing!

Chocolate in it's raw, pure, unadulterated form is called 'raw cacao'. It is causing quite a lot of excitement because of its "nutritious benefits" and "healing properties". The article reports that "raw cacao is considered a superfood because it is loaded with vitamins, minerals and antioxidants".

I guess August has us all waiting for the relief of Fall. We are very lucky that Albuquerque sits in high desert 5000 feet above sea level. This makes our nights wonderfully cool and our early mornings comfortable enough to open the doors and windows all through the summer. Then when we tuck in for the mid-day heat, its not so dramatic.
